Michael in Keilor Downs recommends a choc ripple log.

He says the key to getting this cake right ‘is the thickness of how much cream you put in the middle [of the biscuits]’.

All you need is:

– Chocolate ripple biscuits

– Cream (whipped)

– A few drops of vanilla essence (optional)

Method:

Spread the cream along the base of a serving platter.

Stand one biscuit upright and spread with cream, then sandwich it between another biscuit.

Repeat until you have a log of cream and biscuits.

Spread any remaining cream on the outside of the log.

Leave it in the fridge overnight.
